“乳品委員會”給國人的建議量是每日攝取含鈣量1 ,000毫克最適合 ，但奇怪的是 ，住在非洲仍過著幾近原始生活的班圖婦女 ，每日雖只攝取350 毫克鈣質 ，竟不曾有骨質疏鬆症發生。反觀世界上每日攝取含鈣量最高的愛斯基摩土著 ，每天都吃魚 ，含鈣量達2 ,000毫克 ，是正常值的二倍 ，卻是世界上骨質疏鬆症最嚴重的地方。而美國、英國乳品消耗量最多的國家 ，骨質疏鬆...症也最普遍 ，道理到底在那裡？原來骨質疏鬆症的發生不在於你攝取的鈣夠不夠 ，鈣質量的多少並不會影響你得骨質疏鬆症 ，關鍵在你能不能「保持」鈣質不被流失。
那麼鈣質為什麼會流失呢？
因為國人 嗜吃「肉、奶、蛋」等蛋白質含量豐富的食物 ，身體內蛋白質太多會造成「酸性」體質 ，人體一旦酸質化 ，身體為了維持平衡 ，自然而然地會自「骨骼」中提取鈣質來中和酸性 ，成為微鹼狀態；試想 ，一個人經年累月被抽鈣質來中和 ，骨骼中的鈣質每天流失 ，怎麼會不造成骨質疏鬆症呢？
因此元凶是「蛋白質過量」流失了鈣質 ，而非鈣質吃得不夠。
那麼檢驗一下 ，我們每日飲食蛋白質真的過量嗎？
根據國科會的建議 ，人體正常的蛋白質量 ，以體重60公斤 的女人為例 ，每天只需45公克就夠了（男人約需50公克） ，以純素食的人而言 ，輕易就可得到57公克 ，何況肉食主義者 ，隨便一塊肉、一個蛋就過量了。牛奶的含鈣量固然很高 ，可是蛋白質更高 ，所以牛奶喝越多的人鈣質流失更多 ，加上「肉、蛋」是高蛋白質食物 ，骨質疏鬆症不發生才怪 ，所以不要怪鈣質攝取夠不夠 ，正常飲食鈣質一定夠 ，鈣質多或少不會造成骨質疏鬆症 ，蛋白質過量才是元凶。願大家有正確的認識 ，如此 ，骨質疏鬆症才不會找上您！
